Ingredients You’ll Need For Breakfast Biscuit Sandwiches
- All-purpose flour – This is the base for the biscuits.
- Baking powder + baking soda – These are the leaveners, contributing to rise and that golden brown color.
- Cold butter – This is the fat in the biscuits. Keeping the butter cold helps create flaky layers while the biscuits bake.
- Cold buttermilk – For fluffy, moist biscuits.
- Eggs – We’ll need eggs for tender biscuits, the egg wash for the biscuits, and for building the sandwiches!
- Bacon – You can use whatever bacon you like. You can also substitute the bacon for sausage or leave it out completely. I love the flavor of applewood-smoked bacon.
- Honey – This is in the biscuit dough for flavor. I also love to brush some on top of the warm biscuits with butter– SO GOOD.
- Cheese slices – Use what you have, but I love the taste of Colby Jack. I think cheddar would also be really good on this sandwich.

How to Make Breakfast Biscuit Sandwiches

- Mix together the dry ingredients. Then, grate the butter into the flour mixture. Freeze for 5 minutes. In a large measuring cup, whisk together the wet ingredients. Then remove the bowl from the freezer and break up the cold butter into the flour until it looks like small peas. Then add the wet ingredients.

- Mix until the dough just comes together. Then dump the dough onto a floured counter. Press into a 1-inch thick rectangle.

- Cut the biscuits, transfer them to a baking sheet, and place in the freezer for 10 minutes

- Brush the biscuits with egg wash.

- Bake for 13-15 minutes at 400F until golden brown. Brush with honey butter and sprinkle with flaky sea salt.

- Add the bacon to a baking sheet. Bake for 15-20 minutes at 400F.

- Make the aioli. Scramble the eggs.

- Build the breakfast biscuit sandwiches. Start with the aioli, then eggs, then cheese, then bacon.

- Serve warm.
Tips and Tricks
For a melty cheese sandwich, remove the top of the biscuit and bacon. Then place the bottom half of the sandwich in the broiler for 1 minute, until just melted. Be careful not to dry out your biscuit.
Switch out the toppings: You can swap out the bacon for turkey bacon or any sausage you choose. I like to top mine with arugula for a fresh bite!

Breakfast Biscuit Sandwiches

Ingredients
Biscuits:
- 4 cups all-purpose flour
- 2 tablespoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons kosher salt
- 1 1/2 cups unsalted butter, cold
- 1 cup buttermilk, shaken and cold
- 1/4 cup honey
- 2 large eggs, cold
Honey Butter:
- 1/4 cup unsalted butter, melted
- 2 tablespoons honey
- flaky sea salt, for garnish
Assembly:
- 10 slices bacon, about 1 pound
- ยผ cup mayonnaise
- 1 tablespoon honey
- 1 tablespoon Frankโs hot sauce
- 10 large eggs
- ยผ cup heavy cream
- 8 slices of Colby Jack
Instructions
To Make the Biscuits:
- Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix together the dry ingredients: all-purpose flour, baking powder, baking soda and salt. Using a box grater, grate the butter into the flour mixture. Transfer the bowl to the freezer while you gather the wet ingredients, about 5-7 minutes.
- Measure out the buttermilk and honey, and add the egg; whisk until combined. In a small bowl, make the egg wash, whisking together the egg and milk. Transfer both to the refrigerator.
- Grab the bowl out of the freezer, and gently break up the butter and combine with the flour, using your hands, until it resembles small peas. Add the buttermilk mixture all at once to the flour mixture.
- Mix until barely combined; and lightly knead the dough. until it forms one solid mass. If it's super moist, you can add a tablespoon or two more of flour. Sprinkle your kitchen counter with flour and dump the dough onto it. Press the dough into a 1-inch thick rectangle.
- Cut the biscuits into 4×3-inch rectangles. I ended up with about eight biscuits. Transfer them to the baking sheet. Transfer them to the freezer for 10-15 minutes.
- Preheat oven to 400โ. Brush the tops with egg wash and transfer to the oven to bake for 13-15 minutes, until the tops are lightly golden brown. Make the bacon at the same time (see below).
- Once the biscuits are done, combine the melted butter and honey and brush the tops of the warm biscuits. Then, sprinkle them with a bit of flaky sea salt.
To Make the Breakfast Sandwiches:
- Place the slices of bacon side by side on a sheet tray. Transfer to the oven to bake with the biscuits for 15-20 minutes (depending on the thickness), until golden brown and crispy. Transfer to the paper towels.
- To make the honey aioli, whisk together the hot sauce, honey and mayonnaise.
- Crack the eggs in a bowl. Pour in the heavy cream, salt and pepper. Whisk together.
- Place a non-stick skillet, set over medium low heat, melt the butter in a pan. Pour in the beaten eggs and mix until the eggs have scrambled and cooked. I like a medium scramble.
To Assemble the Sandwiches:
- Cut open the biscuits. Add a little aioli, top with the eggs, a slice of colby jack, pieces of bacon. And repeat with the remaining sandwiches. Serve them warm.
