Line a baking sheet with parchment paper and set aside.
In a large bowl, mix together the dry ingredients: all-purpose flour, baking powder, baking soda and salt. Using a box grater, grate the butter into the flour mixture. Transfer the bowl to the freezer while you gather the wet ingredients, about 5-7 minutes.
Measure out the buttermilk and honey, and add the egg; whisk until combined. In a small bowl, make the egg wash, whisking together the egg and milk. Transfer both to the refrigerator.
Grab the bowl out of the freezer, and gently break up the butter and combine with the flour, using your hands, until it resembles small peas. Add the buttermilk mixture all at once to the flour mixture.
Mix until barely combined; and lightly knead the dough. until it forms one solid mass. If it's super moist, you can add a tablespoon or two more of flour. Sprinkle your kitchen counter with flour and dump the dough onto it. Press the dough into a 1-inch thick rectangle.
Cut the biscuits into 4x3-inch rectangles. I ended up with about eight biscuits. Transfer them to the baking sheet. Transfer them to the freezer for 10-15 minutes.
Preheat oven to 400℉. Brush the tops with egg wash and transfer to the oven to bake for 13-15 minutes, until the tops are lightly golden brown. Make the bacon at the same time (see below).
Once the biscuits are done, combine the melted butter and honey and brush the tops of the warm biscuits. Then, sprinkle them with a bit of flaky sea salt.
To Make the Breakfast Sandwiches:
Place the slices of bacon side by side on a sheet tray. Transfer to the oven to bake with the biscuits for 15-20 minutes (depending on the thickness), until golden brown and crispy. Transfer to the paper towels.
To make the honey aioli, whisk together the hot sauce, honey and mayonnaise.
Crack the eggs in a bowl. Pour in the heavy cream, salt and pepper. Whisk together.
Place a non-stick skillet, set over medium low heat, melt the butter in a pan. Pour in the beaten eggs and mix until the eggs have scrambled and cooked. I like a medium scramble.
To Assemble the Sandwiches:
Cut open the biscuits. Add a little aioli, top with the eggs, a slice of colby jack, pieces of bacon. And repeat with the remaining sandwiches. Serve them warm.
Notes
Tips and Tricks:For a melty cheese sandwich, remove the top of the biscuit and bacon. Then place the bottom half of the sandwich in the broiler for 1 minute, until just melted. Be careful not to dry out your biscuit.Switch out the toppings: You can swap out the bacon for turkey bacon or any sausage you choose. I like to top mine with arugula for a fresh bite!
