Arroz con Leche is one of my favorite desserts. They make arroz con leche all throughout Latin America, including my beloved Peru. It consists of rice slowly cooking on the stove with milk, sugar and spices.

What Are Muddy Buddies 

Muddy Buddies (also known as Puppy Chowis a dessert/snack with roots in Midwestern culture. Typically the recipe structure is as such: Chex Cereal, chocolate wafers, peanut butter, powdered sugar and additional add-ins. Given this structure, I customized this recipe to have lots of flavor reminiscent of Arroz con Leche!

How to Make Arroz con Leche Muddy Buddies 

  1. Prep a baking sheet with parchment. And add the Rice Chex to a large bowl. 
  2. In a resealable kitchen bag, mix together the powdered sugar, cinnamon and salt. 
  3. We’re going to create a double-boiler next. I like doing this by filled up a saucepan with a few inches of water. And then placing a glass or stainless steel bowl atop. Add the white chocolate melting wafers and coconut oil. 
  4. When it’s melted, stir it until smooth and then mix in the vanilla bean seeds. 
  5. Pour it on top of the Rice Chex and give it a mix until all of them are evenly coated.
  6. Transfer the Rice Chex to the bag with the powdered sugar, seal it up and then shake it a few times. You really want to shake it up until it’s evenly coated. 
  7. Then, pour the muddy buddies onto the prepared baking sheet and allow it to set for about 30 minutes. At this time, it’s ready to serve! 

Tips and Tricks for Arroz con Leche Muddy Buddies

  • This recipe moves quickly. It’s super easy but I find that you really have to do it all in one fell swoop for optimum deliciousness. Be sure to prep all of your ingredients.

Variation Ideas 

  • Rice Chex – I used the Rice Chex to mimic the rice flavor that is so delicious in Arroz con Leche. Having said that, I think this recipe would be delicious with other Chex flavors too. Chocolate Chex, Cinnamon Chex or Vanilla Chex. 
  • Coconut oil – I love the hint of coconut flavor. If you don’t like it or want to skip it, you can use refined coconut oil OR you can use a neutral oil such as avocado or vegetable oil.

Ingredients 

  • 3/4 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 5 cups Rice Chex
  • 1 cup white chocolate melting wafers
  • 1 tablespoon coconut oil, , melted
  • 1 vanilla bean, , seeds scraped

Instructions 

  • Place a sheet of parchment onto a baking sheet and set aside. Add the Rice Chex to a large bowl and set it aside.
  • In a resealable bag, add the powdered sugar, cinnamon and kosher salt. Mix it all together with a fork.
  • In a small saucepan filled with a few inches of water, with a glass or stainless steel bowl nestled atop, set over medium-low heat, add the white chocolate melting wafers and coconut oil. Allow the chocolate to melt slowly and then stir it with a silicon spatula until smooth. Remove it from the heat and then add the vanilla bean seeds and stir it until combined.
  • Pour the melted white chocolate mixture atop the Rice Chex. Give it a good mix until evenly coated and then immediately transfer to the prepared resealable bag. Close the bag securely and shake it, until all of the Rice Chex is evenly coated.
  • Pour it on the prepared baking sheet and allow to dry and set for 30 minutes.
