Coconut Kiwi Popsicles

Ingredients

  • 2 cans of light coconut milk
  • 3/4 cup powdered sugar sifted
  • Pinch of salt
  • 3 kiwis peeled and sliced

  • Just a heads up, the sifting of the powdered sugar is super important because then you’ll have little balls of powdered sugar throughout the coconut milk and that ain’t cute! In a bowl, whisk together the coconut milk, sifted powdered sugar and salt until smooth.
  • Next, halve most of the kiwis. Pour in a teeny bit of coconut milk into each mold. Place the kiwi slices at the bottom, facing outward. I placed them back to back so they would press against mold on either side. This made them super visible after the popsicles were frozen. Top them with a few more slices of kiwi and fill them about half way. Next, stick in the popsicles sticks. I found this the way to go since the slices of kiwis should help the popsicle sticks stand upright. Fill with the remaining coconut milk mixture. Transfer to the freezer and freeze for at least 8 hours, ideally overnight.
  • To remove, run the molds under warm water until they pop out when you pull on the popsicle sticks.
