Make this Strawberry Matcha Latte for a delicious refreshing pick-me-up. Fresh strawberries are gently cooked to make a strawberry syrup. Heavy cream makes a strawberry foam that's poured on top of your favorite iced matcha latte.
To a small saucepan, set over medium heat, add the strawberries, sugar and water. Cook until the strawberries have softened. Strain the strawberries and keep the syrup. Allow to cool.
To Make the Strawberry Whipped Foam:
To a small bowl, add the heavy cream to the strawberry syrup. Whip until light and fluffy, about 30 seconds or so. I like a very soft whipped cream for this drink. I like it to be pourable.
To Make the Iced Matcha Latte:
Add the matcha to a small bowl, pour in about 2 tablespoons of hot water. And stir vigorously until it's dissolved. Lastly, mix in the honey.
Fill a glass with ice. Pour in your milk of choice, the matcha and top with the strawberry foam.

Tips and Tricks:
Other fruit to use - I haven't tried this with other fruits but I think raspberries would be delicious. I would say it might need a touch more honey since they tend to be tarter than strawberries. Blueberries, peaches and blackberries would all be delicious.
Ceremonial vs. conventional matcha - There are two different grades of matcha. Ceremonial is higher quality and usually more expensive. It's best in drinks and conventional works great in baking (like my Matcha Tiramisu or Chocolate Matcha Cake).
