Brownie Granola

Servings: 4 TO 6 - 4 cups granola

Ingredients

  • 3 cups rolled oats
  • 1 cup roughly chopped walnuts
  • 4 tablespoons honey
  • 1/3 cup brown sugar
  • 1/3 cup coconut oil
  • 1/3 cup cocoa powder
  • 1/2 teaspoon sea salt
  • 2 ounces dark chocolate chips (I used cocoa nibs)

Instructions

  • Preheat your oven to 300 degrees F. Line a baking sheet with parchment and set aside.
  • In a medium bowl, combine the rolled oats and walnuts. In a small saucepan, set over medium heat, mix together the honey, brown sugar, coconut oil, cocoa powder and salt, about 3 to 5 minutes until heated through and it starts to boil.
  • Pour the sticky cocoa mixture over the rolled oats and toss thoroughly thoroughly coated. Spread the mixture onto the baking sheet evenly. Transfer to the oven to bake for 10 minutes. At the 10 minute mark, give the granola a toss and bake for an additional 10 minutes. Remove from the oven and toss the chocolate on top—it’ll begin to melt immediately. Let granola cool completely before breaking it up with your hands. Keep in an airtight container for 1 week.
