The Year of Cozy: Fruit Sugars
Servings: 1 cup fruit sugar
- 1/2 cup freeze dried fruit (peach, pineapple, blueberries, strawberries)
- 1 cup pure cane sugar
In a blender or food processor, pulse until the mixture resembles a powder. In a bowl, combine the powdered freeze-dried fruit and sugar; add 1/8 teaspoon water. Rub the entire mixture vigorously with your hands until the sugar turns the color of the fruit.
Transfer to a parchment-lined baking sheet and spread out the sugar evenly. Place the baking sheet near a sunny window to dry for 1 to 2 hours. Store in an airtight container for up to 6 months.
