Did you know that Instant Pot but it was just sitting in a closet somewhere because they didn’t know what to make with it. Or it intimidated them and they didn’t know how to use it. I’m here to tell you: this is normal. It really is. Today we’re going to put it to good use with this recipe for Instant Pot Creamy Mashed Potatoes.
Even though I was born in the South (hi Fulton county), my love for biscuits didn’t begin until I went to high school and would leave my four hour tennis practices depleted and hungry. Luckily there was a Popeyes right by the courts, but I never wanted to ruin my dinner completely so instead of getting chicken and a whole plate, I’d just order two biscuits with a side of butter and honey. Oh man, they were SO good. I couldn’t be more excited to share these Flaky Buttermilk Biscuits!
That experience turned me into a hardcore biscuit-loving human. I love biscuits of all kinds but to be honest, ones made with shortening are it! And guess what, I’ve never baked them. I’ve always opted for full butter. And yes, they’re good, delicious even, but they’re not like this. I’m here to say that if you’re shy to bake with shortening, so was I but we’re here together, let’s do it!!
Last week I had the pleasure of going to lunch with Carla Hall and she was so amazing. We talked for a few hours about all sorts of things. I’m not gonna lie, I was a little nervous before, but once I sat down I was like, why was I so stressed?! She’s such a beautiful person, even better in person than what you see and know from TV.
Sometimes I just get the urge for crazy and drastic change. Like, maybe chopping my hair all off and having a pixie cut like Michelle Williams or marching into Barney’s and buying a dream bag or moving to a new city where I know no one.
Dreaming about moving to a new city has been doing it for me lately. I’ve been thinking about how awesome it would be to eat in new-to-me restaurants, visit new parks, museums and just create a whole new routine for life. And even the prospect of making new friends in this very new town makes me really excited. Of course Amelia and my dude would come along, too. I have a feeling that Amelia would aide greatly in the whole making new friends department.
This is probably a pipe-dream. I mean, I love Los Angeles, but I’ve been a-dreamin’ lately, hard. And it’s fun.
I try to be a good person on the daily. When I’m going into the coffee shop, I always hold the door for the person behind me. I smile at strangers. I smile at cute babies…and even more at cute doggies. I give people the benefit of the doubt. I call my mama on the regular. I try to tell the truth even when it sucks. I eat my vegetables and I like it.
So, if all that doesn’t work and I’m sent to hell at the end, I guarantee it’ll look like a mall on Black Friday. There will be people and shopping carts everywhere. Babies will be crying (because they know what’s up!). There might even be a few lil’ people toppling over each other fighting over some game console I’ve never heard of. People will be outside in tents camping to get the best deal on a TV. It will look a lot like the weekend of Thanksgiving. That’s what my hell is.
My idea of heaven is cooking soup in colorful socks. What? Yes. Maybe even Vince Guaraldi’s A Charlie Brown Christmas will be blaring in the background. Cooking soup and making snacks! It’s my favorite pastime. This lil’ tartine is a perfect snack/breakfast/lunch meal.
Wasn’t 4th of July kind of a weirdo this year? I mean, in the middle of the week? How awkward. No long weekend. No weekend getaways. I wonder if 4th of July feels a little weird about itself.
Or maybe it’s all sorts of proud that it gave people an awesome little mid-week break. Who knows! I spent the good part of the morning in my pjs putting brown butter and blueberries in cookies so, for me, it was kind of perfect.
I’ve now realized that brown butter very rarely doesn’t have a place in edible things. It never fails at making things better. Never. I think we should talk about these cookies. I love them…a lot.
