This Vegan French Toast recipe uses plant-based ingredients to give you a delicious 10 minute breakfast. Serve it with topped with simmered berries, powdered sugar for an indulgent breakfast and you won’t even know it’s vegan!

I love French Toast (see my Custard French Toast and Orange French Toast). It’s one of my favorite things to make for breakfast. This is a lighter version that I think everyone will love!

Ingredients You’ll Need for Vegan French Toast

  1. Egg alternative – I’m using Just Egg. It is made from mung bean and you truly cannot taste the difference.
  2. Plant-Based Milk – I used almond milk but feel free to use soy milk, oat milk or your favorite plant-based milk.
  3. Bread – I used a French loaf of bread that was dairy-free but feel free to use what you like.
  4. Cinnamon – Can you even have French toast without cinnamon. Probably not!

How to Make Vegan French Toast

  1. Begin by making the cranberry syrup. This is a 100% optional so if you don’t want to make it, skip it and get straight to the French Toast. Add all of the ingredients to a saucepan and simmer.
  2. In a shallow casserole dish, whisk together the Just Egg, almond milk, sugar, cinnamon and vanilla. Warm up a pan with olive oil, coconut oil or butter.
  3. Dip the slices into the “egg” mixture and add them to the pan, working in batches. Cook on both sides until lightly golden brown.
  4. Repeat until you’ve worked your way through all of the slices of bread. Serve with the cranberry sauce and dust the French toast with powdered sugar.

Recipe Tip for this Vegan French Toast

The oven is your friend. Preheat the oven to 200F. Place a baking sheet in the oven and when you finish cooking up the French toast slices, transfer them to the oven to keep warm while you finish making the rest.

Recipe FAQs

Can I use something else besides Just Egg?

Absolutely. You can simply skip it and just add in 1/4 cup of mashed banana or apple sauce. You really want to make sure it’s mashed up quite smoothly.

What other milks can I use?

You can use soy milk, oat milk, cashew milk or any other dairy-free alternative.

What breads should I use?

I used a French loaf. I like to think something that absorbs well would do the trick. You could use ciabatta, a vegan brioche or challah would do the trick too. Just be sure to get a loaf of egg and dairy-free bread to make this vegan French toast.

Can I make this ahead?

Absolutely. You can pour the “egg” mixture over the bread slices, let it soak up and bake it in the oven at 350F for 20 minutes.

Vegan French Toast Recipe

This vegan french toast is creamy and delicious. Topped with simmered cranberries and powdered sugar for an indulgent breakfast that is dairy-free!

Equipment

  • 1 non-stick skillet

Ingredients 

Cranberry Maple Syrup:

  • 10- ounce bag of cranberries
  • ½ cup granulated sugar
  • ¼ cup maple syrup
  • ½ cup water
  • 1 teaspoon pure vanilla extract or vanilla paste
  • Pinch kosher salt
  • Zest and juice from 1 orange, about 3 tablespoons

French Toast:

  • 1 loaf of bread, I used a French loaf, cut into 1-inch slices
  • 1 cup JUST Egg 
  • 1/2 cup almond milk 
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract or 1/2 teaspoon vanilla paste 
  • 1 tablespoon coconut oil or olive oil or butter 
  • Powdered sugar, for topping

Instructions 

To Make the Cranberry Maple Syrup:

  • To a medium saute pan, add the cranberries, sugar, maple syrup, water, vanilla, salt and orange juice and zest. Bring to a simmer over medium heat and allow to cook until softened and bubbling, about 10 minutes. I like to give it a stir every few minutes to make sure nothing is burning at the very bottom. Remove from heat and set aside. 

To Make the French Toast:

  • To a casserole dish or a bowl, whisk together the JUST Egg, almond milk, sugar, cinnamon and vanilla. 
  • Place a non-stick skillet over medium heat and add the oil or butter. When warm, dip the slices of bread into the JUST egg mixture, letting any excess of the mixture drip off back into the dish. Transfer to the pan and cook until golden brown on each side, about 1 to 2 minutes per side. Repeat with the remaining slices of bread. 
  • Dust with a bit of powdered sugar and serve with a few spoonfuls of the cranberry maple syrup on top.

    This recipe is absolutely delicious! I made it for brunch today with some St. Pierre Brioche bread and oh my goodness, I was in heaven! I rarely treat myself to pancakes or french toast but your recipe is definitely going to become a staple. I have got to have these at least once a week now, LOL! Thank you!

  2. I saw this recipe in my inbox, actually not knowing that it was plant-based for some reason! I guess the e-mail didn’t include the plant-based indication, but once I found out, I was absolutely ECSTATIC! French toast was always a favorite indulgence breakfast of mine that I have not enjoyed in months. Utilizing a thick bread with some hearty form of eggs and milk is critical for a quality French toast–I’ve never tried the JUST egg product, but I really want to now! I’m so happy it worked for you. Hopefully more people will cook with plant-based eggs than real ones for the environmental, ethical, and health benefits of veganism!
