This bagel sandwich is loaded with homemade cream cheese, smoked salmon, egg, sliced cucumber, red onion and sprouts. This delicious easy-to-make sandwich is ideal for morning, lunch or night. Serve this with my horchata coffee and overnight cinnamon rolls for the perfect match.

I love breakfast and I LOOOVE sandwiches. Everything from my ultimate veggie sandwiches, French dip sandwiches, grinder sandwiches to my classic BLT Sandwiches. All are amazing. This is a breakfast (or lunch) sandwich option. Let’s get started.

Ingredients You’ll Need for a Bagel Sandwich

  1. Bagels. I like to buy my bagels. Los Angeles has lots of good options (think: Maury’s, Courage Bagels or Layla’s).
  2. Cream cheese. I love to make my own homemade cream cheese. Store-bought is great too.
  3. Smoked salmon. I love to buy wild-caught smoked salmon. It’s delicious.
  4. Sprouts. They are underrated. They add such a delicious crunch and texture to all sandwiches.
  5. Tomato + red onion. These two add texture and freshness.

How to Make a Bagel Sandwich

  1. Make an herb cream cheese. I like to make a flavored cream cheese. Mix together the dill, cream cheese and Italian parsley.
  2. Cook the egg. Make a scrambled egg in a small skillet.
  3. Toast the bagels. I like toasted bagels. Some people don’t; do as you wish!
  4. Assemble the bagel sandwiches.

Recipe Tip

Variations. Here are some other options for filling ideas:

  1. Crispy bacon, scrambled egg and American cheese. Yum.
  2. Homemade cream cheese, smoked salmon, pickled red onions and lots of dill and capers.
  3. Homemade cream cheese, heirloom tomatoes, sliced cucumber and lots of sprouts.

Making this Bagel Sandwich couldn't be easier. A lightly toasted bagel layered with cream cheese, egg, smoked salmon, sprouts and red onion. Refreshing and delicious!

Ingredients 

  • 3/4 cup cream cheese, (homemade or store-bought)
  • 1 tablespoon minced fresh Italian parsley
  • 2 teaspoons minced fresh dill
  • 4 large eggs, beaten
  • 4 bagels, toasted (if you like) and halved
  • 6 ounces smoked salmon
  • 1 Persian cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 tomato, thinly sliced
  • 1 handful alfafa sprouts, (or any other type of sprouts)

Instructions 

  • This is hardly a recipe. But here it goes: mix the cream cheese with the fresh Italian parsley and dill. Set aside.
  • Cook the scrambled eggs in a medium non-stick skillet until soft and fluffy, about 5 minutes.
  • To assemble the bagels, smother the cream cheese on the bottom half of the bagels. Divide the scrambled eggs amongst the bagels. Top with a few slices of smoked salmon, cucumber, red onion, tomato and a handful of sprouts. Cut the sandwich in half and eat immediately.
