I was hoping to bring you a new breakfast recipe today but it’s not ready yet. It’s not ready. I’m really really excited about it so rather than bringing you an ok-this-will-do-version, I’m waiting, giving it a few more go’s and will present it when it’s perfect.
Working the past few days have been challenging. It’s challenging to walk to the grocery store when you don’t have a car. I have a car. It’s actually in my driveway. I just can’t find the keys to my car. Last Thursday I came back from the mechanic (for normal maintenance like new brakes/oil change), set my car key down (somewhere?) and now can’t find it. I have literally looked everywhere, including the refrigerator AND the freezer (I’m not above this – I once took the TV remote control to the supermarket, mistaking it for my wallet). Now that I’ve looked everywhere, Amelia has become the number one suspect. SHE HAS A SUSPICIOUS FACE!
She gets super pumped at taking my socks/shoe/sunglasses and running away from me, hoping I’ll chase her. It’s a fun game for her. Not a fun game for me. So, yeah, she’s a suspect. I’ve been putting off admitting to myself that the key is long-gone and I’ll have to call a locksmith for a new key. That sounds like a lot of trouble, especially when I’m trying to perfect a new waffle recipe. It’ll happen in due time, as in later today.
In the meantime, enjoy these Charred Sweet Corn Fritters. They may look like normal hush-puppy kind of things on the surface but there’s so much more to them! Ahh! There’s brown butter (because if there’s gonna be melted butter, why not brown it, RITE?!), charred sweet corn, buttermilk (hai tang, hai!), melty cheese and then the whole thing is dipped in a really refreshing buttermilk ranch dressing.
I love ranch. Everything is better when it’s dipped in ranch … even pizza. So trashy. I can be trashy sometimes.

my husband is a ranch fanatic…he especially loves it with pizza.
and I have definitely left my car keys in a different state before. A few years ago, I parked my car at my mom’s house and hitched a ride with her to my grandparents house in Utah for Thanksgiving…I definitely had a mini meltdown about it. but, luckily the dealership was able to create me a new key from my VIN number. random.
Ahh! That’s what I’m gonna have to do.

hahaha… dear Amelia! You think she might have swallowed it? Or buried it somewhere? I’d scurry off and make me 5 sets of keys in case that ever happens again. Love that you used cornmeal for corn fritters. Just perfect.
I lost my mail key this weekend… It disappeared into thin air, and I suspect my cat knocked them into the garbage right before I took it out. When I get my replacement from the postoffice I fully intend on making like 15 copies and stashing them around the house.
I am a sucker for corn fritters and these look amazing. I also am embarrassed to admit but I only discovered ranch dressing about 2 years ago. In my defence, it’s not huge here in Australia but I’m totally converted.
In regards to the key, my Lily thankfully is a taker but not a chewer/eater and likes to leave things in “her” space – near her food bowls, beside her outside bed, in the bookshelf(her lounge room bed is next to it), in her toy box.
I was away for a weekend on Shelter Island with my boyfriend and some friends, and when it was time to go, my car keys were nowhere to be found. he has a habit of picking things up, fiddling with them, and then putting them down elsewhere, totally unconsciously so they could have been everywhere! Eventually we found them loose in his duffle, so we were able to get off the island! I also lost my spare key (still lost) a while ago in or around my car… that would be useful to have.

There’s nothing trashy about dipping everything in ranch. I mean, that’s like saying i’m despicable for wrapping everything in bacon. Some things just pair well in life.

I made some ranch dressing last night and since we’re heading out of town soon & I wouldn’t have a use for a whole quart of buttermilk I just used the lemon juice in regular milk trick – So(!) not the same! Buttermilk or nothing! 😉

It’s just one key right? And I bet it still has the tag from the dealership on it which is probably what attracted your little princess. Do you have vents in your floor? Between cushions on furniture or her dog bed? You know how they play with things with their feet and push them into tight spaces? Under the stove/frig/closet door? Are you sure you didn’t slip it into one of your pockets thinking to leave it somewhere else later?
It’s just one key. No tag. 🙁 But I have looked in between cushions and under the fridge. Ugh.
