This Mojo Sheet Pan Chicken is the perfect weeknight meal. Juicy chicken is roasted on a sheet pan with orange and lime slices, onions and green olives. Made with minimal ingredients this easy chicken recipe is filled with bright and savory Mojo flavor! Make it a meal by serving rice or Instant Pot Mashed Potatoes for dinner!
If you’re unfamiliar with Mojo, it’s a Cuban marinade filled with fresh citrus juices, garlic, and olive oil. It adds incredible flavor to chicken, fish, vegetables, even snacks! Use it make these Garlic Chicken Wings, Pollo Frito a la Criolla or as a dipping sauce for these Plantain Chips. It’s an all-around marinade that can be used to make everything better!
Ingredients You’ll Need for Mojo Sheet Pan Chicken
- Bone-in chicken – I used a mix of thighs, drumsticks, and wings but feel free to use all thighs or drumsticks, etc.
- Mojo sauce – this is a classic Cuban sauce made out of orange and lime juice, olive oil, fresh garlic, and oregano. It’s gives this sheet pan chicken a Cuban flair!
- Vegetables – In addition the orange and lime juice used in the marinade, you’ll need slices of oranges and limes to cook with the chicken, a sliced onion and green olives too!

How to Make Mojo Sheet Pan Chicken
- Using a mortar and pestle, crush the garlic with salt. Add the oregano and mix.
- Mix garlic, olive oil, orange and lime juices. And then, set marinade aside.
- Season the chicken with salt and pepper. Place into the garlic marinade overnight. As a result, it’ll lead to super delicious chicken.
- The next day, place the onion, citrus slices, green olives and marinated chicken onto a baking sheet.
- Bake until crispy. Serve with rice, tostones and/or beans.
Tips and Tricks
Make it ahead of time! You can marinate the chicken overnight or the morning that you are planning to serve it.
Try to leave the chicken in the marinade for as long as possible. The citrus juices will help the tenderize the meat and the garlic will impart so much flavor to the chicken making it even more incredible!
If you don’t own a mortar and pestle simply mince or crush the garlic with the back of your knife, add it to the marinade then proceed with the recipe.

Mojo is a marinade that typically has four components: sour oranges, fresh or dried oregano, oil, and lots of garlic.
Mojo originates in Cuba and is found in other parts of the Caribbean. Sour oranges are prominent throughout the carribean. But they aren’t available in the United States, so I like to use a combination of orange juice and lime juice to make a similar flavor!

Mojo Sheet Pan Chicken
Equipment
- 1 Baking Sheet
- 1 mortar and pestle
- 1 medium bowl or resealable plastic bag(Ziplock)
Ingredients
Mojo sauce:
- 8 cloves of garlic, peeled and minced
- 1 teaspoon sea salt
- 1 tablespoon fresh or dried oregano
- 1/2 cup olive oil
- 1/4 cup lime juice, from about 4 limes
- 1/4 cup orange juice, from about 1 orange
- 2 pounds bone-in, skin-on chicken pieces (I used a mix of thighs, drumsticks, wings)
Sheet Pan:
- 1 yellow onion, peeled and sliced
- 5 to 6 orange slices
- 5 to 6 lime slices
- 1 cup green olives
Instructions
To Make the Mojo:
- In a mortar and pestle, add the garlic and salt. Using the pestle, crush and twist the garlic until it's smashed. Add the oregano and give it a good mix.
- In a medium bowl or resealable plastic bag (like a Ziplock), add the crushed garlic, olive oil, lime juice and orange juice. Use a fork to mix it around.
- Sprinkle the chicken with a few pinches of salt and pepper and then transfer the chicken pieces to the resealable plastic bag. Seal up the bag and then give it a good shake so the pieces are all coated in the mojo mixture.
- Transfer to the fridge to marinate for 3 hours, ideally overnight, but realistically I know that won’t always happen. Even marinated for 30 minutes is delicious! Marinate for however long works.
When You’re Ready to Bake the Chicken:
- Preheat the oven to 400 degrees F. On a clean baking sheet, add the onion, slices or orange and lime, green olives and lastly, the marinated chicken, along with the marinade. Transfer to the oven to bake until chicken is cooked and skin is crispy, about 40 to 45 minutes.
- Serve with rice, tostones and/or black beans. YUM!

i made the mojo chicken once and loved it! what if i wanted to do it in the slow cooker instead? any suggestions?
Ooo that sounds good. I would do skinless chicken (because the skin would get too soggy in the slow cooker) and just make the marinade, stick the chicken in with everything and let it go for a few hours. Should be amazing!
